Here’s your game plan. This could take a while. When I cooked a 10 lbs. pork butt, I started at 8:30am removed from grill at 4:30pm :
Ingredients:
10 lbs. pork butt
Pit Boss Competition Blend pellets
Kinder’s “The Blend” seasoning (salt, pepper, garlic)
Bone Suckin’ Sauce Seasoning & Rub
Apple cider vinegar
Instructions:
Preparation: Score the fat on top of the pork butt. This allows the heat and smoke to penetrate deeper, making the meat more flavorful.
Seasoning: Rub the pork butt generously with Kinder’s “The Blend” seasoning and Bone Suckin’ Sauce Seasoning & Rub.
Smoking: Set your grill to 230 degrees and let the pork butt cook for 3 hours untouched and unwatched. The patience pays off with a succulent, smoky flavor.
Basting: After the first 3 hours, spray the pork butt with apple cider vinegar every half hour for about 2 hours. Be careful not to spray the fat.
Wrapping: Once the internal temperature reaches 170 degrees, wrap the pork butt with foil. Increase the gill temperature to 270 degrees.
Finishing up: Continue cooking until the internal temperature reaches 203-204 degrees. The fat on top should render, giving the meat a soft Jello-like texture.This could take several more hours, but it ensures that the meat is tender and flavorful. The bone should pull out clean with no meat on it.
Resting and Pulling: Let the meat rest for at least an hour after removing it from the grill. Break it into chunks and pull by hand for that authentic, rustic feel.
