Ingredients:
• Pork tenderloin
• Bacon
• Your favorite BBQ Rub (I used Bone Suckin’ Sauce Seasoning & Rub)
• Your preferred BBQ Sauce (I used Traeger’s Apricot BBQ Sauce)
Directions:
Prepare the Pork Tenderloin: Remove the silverskin from the tenderloin. This thin layer of connective tissue can become tough when cooked, so it’s best to remove it.
Season the Tenderloin: Apply a generous amount of your favorite BBQ rub to the pork tenderloin. Make sure all sides are coated evenly.
Wrap It Up: Cut the bacon strips in half. Lay them over the top of the tenderloin, tucking the ends underneath. The bacon slices should slightly overlap to ensure full coverage. Season the bacon layer with more BBQ rub.
Set the Smoker: Preheat your smoker to 225°F.
Smoke the Tenderloin: Place the bacon-wrapped tenderloin in the smoker. Let it smoke for about 30 to 40 minutes or until the internal temperature reaches 135°F.
Add the Glaze: Brush your favorite BBQ sauce onto the tenderloin. Continue smoking it for about another 30 minutes, or until the internal temperature reaches 145°F.
Rest and Serve: Remove the tenderloin from the smoker and let it rest for a few minutes before slicing. This allows the juices to redistribute throughout the meat. Serve and enjoy your masterpiece!
